Kombucha is a traditional drink made by souring green tea and rich in lactic acid bacteria. To honor the millennia-long history of the drink, Puhdistamo's Kombucha is based on only four very high-quality ingredients: filtered water, organic green tea, organic cane sugar and live Kombucha culture.
It all starts with purified water, where the nutrients and aromas of tea come into their own. Kombucha's tea base, on the other hand, is organic green tea with a rich aroma palette, which is one of the most classic Japanese tea varieties.
Sugar plays a significant role in the fermentation process of Kombucha and serves as fuel for the development of lactic acid bacteria strains, or scoby - sugar is therefore not added to the drink as a sweetener. It is also not about white sugar, but about organic cane sugar. Sugar is only present in the drink < 6 g / 100 ml. All Puhdistamo's Kombuchas are also completely unpasteurized.
A live Kombucha culture is a combination of yeasts and lactic acid bacteria that use the sugars and nutrients in the drink to their advantage. Like fermentation or leavening in general, the process of creating Kombucha is a particularly delicate activity - and you really can't get good things cheaply.
